For the Grits:
 4 cups water
 1 cup stone-ground grits
 1 teaspoon salt
 1 cup sharp cheddar cheese, grated
 2 tablespoons unsalted butter
 1/2 cup heavy cream
For the Shrimp:
 1 pound large shrimp, peeled and deveined
 2 tablespoons Cajun or Creole seasoning
 4 slices bacon, chopped
 1 small onion, finely chopped
 1 bell pepper, finely chopped
 2 cloves garlic, minced
 1/2 cup chicken or vegetable broth
 2 tablespoons fresh lemon juice
 2 tablespoons chopped fresh parsley
 2 green onions, chopped
 Salt and pepper to taste

In a medium saucepan, bring water to a boil. Add salt and gradually whisk in the grits.
Reduce the heat to low and cook, stirring frequently, until the grits are thick and creamy, about 20-25 minutes.
Remove from heat and stir in the butter, cheese, and heavy cream. Adjust seasoning with salt and pepper. Keep warm.
