 Large flour tortillas
 Shredded cheese (traditionally Mexican blends like Oaxaca, but cheddar, Monterey Jack, or mozzarella work well)
 Butter or oil for frying
Optional Fillings:
 Cooked chicken, beef, or pork
 Sautéed onions, bell peppers, or mushrooms
 Sliced jalapeños or other chilies
 Refried beans
 Fresh cilantro, diced tomatoes, or avocado

Prepare Fillings: If adding meat, cook and season it to taste. Sauté any vegetables until they are tender.

Assemble the Quesadilla: Lay a tortilla flat on a clean surface. Sprinkle cheese evenly over one half of the tortilla. Add any other desired fillings on top of the cheese. Fold the tortilla over to cover the fillings, creating a half-moon shape.
