For the Noodles:
 8 oz (225g) fresh or dried thin wheat noodles
For the Sauce:
 2 tablespoons sesame paste (tahini)
 1 tablespoon light soy sauce
 1 tablespoon dark soy sauce
 1 tablespoon Chinese black vinegar
 1 tablespoon sesame oil
 1/2 tablespoon chili oil (adjust to taste)
 2 teaspoons sugar
 1 clove garlic, minced
 1 green onion, finely chopped
 Salt to taste
Toppings (Optional):
 Pickled mustard greens, finely chopped
 Bean sprouts, blanched
 Fresh cilantro, chopped
 Toasted sesame seeds
 Roasted peanuts, crushed

Prepare the Noodles:

If using dried noodles, cook them according to the package instructions until al dente. For fresh noodles, blanch them in boiling water for about 1 minute. Drain and rinse under cold water to stop the cooking process.

In a bowl, combine the sesame paste, light soy sauce, dark soy sauce, Chinese black vinegar, sesame oil, chili oil, sugar, minced garlic, and a pinch of salt. Stir until well blended.
