For the Chicken:
 1 lb (450g) chicken breast, cut into bite-sized pieces
 1/2 cup all-purpose flour
 1/2 cup cornstarch
 1 teaspoon salt
 1/2 teaspoon pepper
 2 eggs, beaten
 Vegetable oil for frying
Vegetable oil for frying:
 1/2 cup sugar
 1/4 cup apple cider vinegar or white vinegar
 1/4 cup ketchup
 1 tablespoon soy sauce
 1/2 cup pineapple juice
 1 tablespoon cornstarch mixed with 2 tablespoons water
For the Stir-Fry:
 1 bell pepper, cut into chunks
 1 small onion, cut into chunks
 1/2 cup pineapple chunks

Prepare the Chicken:

Combine flour, cornstarch, salt, and pepper in a bowl. Dip chicken pieces in beaten eggs, then coat with the flour mixture.
Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the chicken pieces in batches until golden and crispy. Drain on paper towels.

In a saucepan, combine sugar, vinegar, ketchup, soy sauce, and pineapple juice. Bring to a simmer over medium heat.
