 2 tablespoons butter
 1/2 cup all-purpose flour, plus extra for coating
 2 cups whole milk
 1/2 cup finely chopped Jamón Serrano or cooked ham
 Salt and white pepper to taste
 Pinch of nutmeg
 2 large eggs, beaten
 1 cup breadcrumbs
 Olive oil or vegetable oil for frying
