For the Taquitos:
 2 cups cooked chicken, shredded (seasoned with salt, pepper, cumin, and garlic powder)
 12 small corn tortillas
 1/2 cup shredded cheese (like Monterey Jack or Cheddar)
 Oil for frying (such as vegetable oil or canola oil)
 Salt to taste
Optional for Serving:
 Sour cream
 Guacamole
 Salsa
 Shredded lettuce
 Diced tomatoes
 Sliced olives
 Crumbled queso fresco
 Chopped cilantro

Prep the Filling:
Combine the shredded chicken with the shredded cheese in a bowl. Add any additional seasoning as desired.

Soften the Tortillas:
Warm the tortillas on a hot skillet or in the microwave so they are pliable and don't crack when rolled.

Roll the Taquitos:
Place a spoonful of the chicken and cheese mixture on each tortilla and roll tightly. Secure with a toothpick if necessary.

Fry the Taquitos:
Heat about 1/2 inch of oil in a pan to approximately 350°F (175°C). Fry the taquitos in batches, turning occasionally, until they are crispy and golden brown. This should take about 3 minutes per batch. Drain on paper towels.

Remove any toothpicks and serve the taquitos hot with your choice of toppings like sour cream, guacamole, salsa, lettuce, tomatoes, olives, queso fresco, and cilantro.
