Prep Time5 minsCook Time5 minsTotal Time10 mins
4 bolillo rolls or small French bread rolls
2 cups refried beans (either from a can or homemade)
2 cups shredded cheese (traditionally Oaxaca cheese, but mozzarella or Monterey Jack can be used)
Pico de gallo or salsa for topping
Butter (optional, for spreading on the rolls)
1

Prepare the Bread: Preheat your broiler. Cut the bolillo rolls in half lengthwise. If you like, lightly butter the cut sides of the rolls. Place the bread halves on a baking sheet, cut side up, and broil for about 1-2 minutes or until lightly toasted. Watch them closely to avoid burning.

2

Add Refried Beans: Spread a generous layer of refried beans on each toasted bread half.

3

Add Cheese: Sprinkle a good amount of shredded cheese over the beans.

4

Broil the Molletes: Place the bread back under the broiler and broil until the cheese is melted and bubbly, about 2-3 minutes.

5

Serve: Serve the molletes immediately, topped with pico de gallo or your choice of salsa.
