 4 bolillo rolls or small French bread rolls
 2 cups refried beans (either from a can or homemade)
 2 cups shredded cheese (traditionally Oaxaca cheese, but mozzarella or Monterey Jack can be used)
 Pico de gallo or salsa for topping
 Butter (optional, for spreading on the rolls)

Prepare the Bread:
Preheat your broiler. Cut the bolillo rolls in half lengthwise. If you like, lightly butter the cut sides of the rolls.
Place the bread halves on a baking sheet, cut side up, and broil for about 1-2 minutes or until lightly toasted. Watch them closely to avoid burning.

Add Refried Beans:
Spread a generous layer of refried beans on each toasted bread half.

Add Cheese:
Sprinkle a good amount of shredded cheese over the beans.

Broil the Molletes:
Place the bread back under the broiler and broil until the cheese is melted and bubbly, about 2-3 minutes.

Serve:
Serve the molletes immediately, topped with pico de gallo or your choice of salsa.
