 Large flour tortillas
 Shredded cheese (traditionally Mexican blends like Oaxaca, but cheddar, Monterey Jack, or mozzarella work well)
 Butter or oil for frying
Optional Fillings:
 Cooked chicken, beef, or pork
 Sautéed onions, bell peppers, or mushrooms
 Sliced jalapeños or other chilies
 Refried beans
 Fresh cilantro, diced tomatoes, or avocado

Prepare Fillings:

If adding meat, cook and season it to taste. Sauté any vegetables until they are tender.

Assemble the Quesadilla:

Lay a tortilla flat on a clean surface. Sprinkle cheese evenly over one half of the tortilla. Add any other desired fillings on top of the cheese.
Fold the tortilla over to cover the fillings, creating a half-moon shape.

Cook the Quesadilla:

Heat a small amount of butter or oil in a skillet over medium heat. Place the quesadilla in the skillet, and cook for about 2-3 minutes on each side, or until the tortilla is golden and crispy and the cheese has melted. Repeat with remaining tortillas and fillings.

Serve:

Cut each quesadilla into wedges and serve hot, ideally with sides like salsa, sour cream, or guacamole.
