 12 oz (340g) dried Chinese noodles or spaghetti
 1 cup thinly sliced scallions (green onions)
 1/2 cup vegetable oil
 1/2 cup vegetable oil
 1 tablespoon dark soy sauce
 2 teaspoons sugar
 Salt to taste
 Optional: a pinch of ground white pepper

Cook the Noodles:

Bring a large pot of salted water to a boil. Cook the noodles according to the package instructions until al dente. Drain the noodles and rinse under cold water to stop the cooking process. Set aside.
